But, it might be a good idea to hold off on spending more money and opt for a healthier option. Prep your lunch ahead with this easy-to-make green bell pepper rice mix.
Bringing homemade lunches to work isn’t an easy task. One big problem is trying to find the time to make them. Let’s be honest—peanut butter sandwiches get old fast. Instead, I decided to create a three-ingredient rice mix that’s not only easy to make, but it costs less than $10 too! It can be used all week long, and I even decided to roll it into a burrito to make it easier to carry to work.
Green Bell Pepper Rice Mix Recipe
- 1 pack of spiced rice mix
- 1 green bell pepper
- Shredded cheese
Boil water in a pot on medium heat. Once boiling, toss in rice and spices, and follow cooking instructions on package. Chop up green bell pepper. Heat the olive oil in a skillet over medium heat. Add the bell pepper and salt. Cook until for 7 to 8 minutes until soft. Once rice is cooked, mix in with the rice. Wait until meal cools down, and top with shredded cheese. Place the rice mixture in a container to eat for the next few days.
