There’s nothing we love more than a mug filled with hot chocolate, so why not enjoy it in cookie form? Santa isn’t the only one who gets to enjoy cookies during the holiday season after all! These peppermint hot chocolate cookies are calling your name then.
- 2 1/3 cups all-purpose flour
- 2/3 cup cocoa
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup granulated sugar
- 2 sticks butter (1 cup)
- 1 large egg
- 1/2 tsp peppermint extract
Mix flour, cocoa, baking powder and salt in a small bowl until mixed. In a separate bowl, beat butter and sugar on low speed. Slowly add in flour mixture and beat on high speed until light and fluffy. Next, beat in egg and peppermint extract until dough is combined. Divide the dough in half. Roll each half between 2 sheets of parchment paper. Place dough in the freezer for at least 30 minutes.
When done freezing, preheat oven to 350ºF. Take out first dough sheet and cut out cookies. Place cutouts on cookie sheet. Freeze sheet for 10 minutes. Then, place the cookie sheet in oven for 10 to 12 minutes or until edges are hard. Repeat until no more dough is left. Decorate your peppermint hot chocolate cookies with simple white icing on top (or even crushed candy canes to make them more festive)!
