Preparing homemade lunches for work is easier said than done. I know, I’ve spent too many weeks last year thinking that a granola bar will suffice my appetite for the entire day… WRONG. It’s actually a really bad idea. I know I’m most productive when I have good and healthy eating habits. Since I’m working hard to tick off those New Year’s resolutions, I decided to make a Mediterranean pasta salad recipe to cover my lunch for the entire week.
Of course, everyone has their own opinion about pasta salad. I personally love it because it’s easy to make and still tastes good cold. One of my favorite salads ever is based on a Greek-style recipe I grew up eating all the time and who knew it could become even more amazing when I added tortellini to the mix.
- 1 package tortellini
- 1 bell pepper, diced
- 1 tomato, diced
- 1 cucumber, diced
- 1/4 onion, diced
- 4 ounces feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons white vinegar
- 1/2 teaspoon oregano
Cook tortellini in a boiling pot of water according to package directions. Drain when cooked. Toss drained pasta with vegetables and cheese. In a separate bowl, mix the remaining ingredients to make the dressing. Pour dressing over salad and mix well. Store in fridge until cool.
